Preparation

  1. Scotch Broth:

    • Heat olive oil in a sauce pot.
    • Sweat onions and garlic until fragrant followed by the carrots, celery and the parsnip.
    • Add the barley to the pan along with the water.
    • Add the Knorr Professional Beef Flavoured Powder and season with pepper. Bring to a boil, then simmer until the barley is fully cooked.
    • When the barley is cooked through, add the shredded meat from the stew along with some of its remaining sauce to enrich the broth. Taste and adjust seasoning. Add Arabic spices, if necessary.
    • Add the kale leaves.
    • Serve with a slice of lemon wedge.
  2. Chef’s Tips:

    • Add half of the carrot, celery and parsnip when the barley is just about to be done. This will help give the soup a mix of soft and crunchy texture of the vegetables.
    • Change the spice accordingly depending on the type that was used in the stew.
