Developing a #food or #beverage #innovation to support #guthealth? You may want to consider adding dried green banana powder into the formulation. Researchers in Thailand investigated the benefits of powders obtained from raw Saba, Pisang Awak Banana and Silver bluggoe banana variants in vitro. Green bananas were used, as in their green stage, bananas stand out for having a high starch/ #resistantstarch content. All 3 green #banana variants: โขContained chlorophyll, beta carotene and lycopene and showed good resistance to stomach and small-intestine enzymes. โขWere a good source of #fiber, vitamins (Vit C, B6, provitamin A), minerals (potassium, phosphorus, magnesium, zinc), bioactive compounds such as #phenolic compounds, and #resistantstarch. โข60โ80% of carbohydrates were indigestible carbohydrates (#resistantstarch, cellulose, hemicelluloses, and lignin). โขDemonstrated good water and oil-binding properties. Good water-binding capacity means that these plants can help to increase the amount of feces and also reduce nutrient absorption rates in the intestine.
