Caraotas
Ingredients
- 1 Smoked Ham Hock
- ½ Kg black beans
- 2 yellow onion
- 1 green pepper
- 1 red pepper
- ½ head garlic
- 1.5 litre lamb stock
Recipe
- Soak beans overnight. Once beans are soft enough, drain water.
- Make the sofrito: Dice onions, peppers, garlic.
- Cut most of the meat off the ham hock into 2 cm squares. Fry these squares in a large pan and render the fat.
- Once brown, remove the meat and fry the onions and peppers, when they begin to soften, add garlic until brown. Add cooking oil or butter if necessary.
- Place sofrito, ham meat, and beans in a large pot. Add ham hock bone. Add Lamb stock until all is covered and bring to boil.
- Once boiling, reduce to simmer for about 2 hours, stir every 15 minutes or so.
- Add pepper to taste, should not need salt. Top off with lamb stock as necessary.
