Caraotas

Ingredients

  • 1 Smoked Ham Hock
  • ½ Kg black beans
  • 2 yellow onion
  • 1 green pepper
  • 1 red pepper
  • ½ head garlic
  • 1.5 litre lamb stock

Recipe

  • Soak beans overnight. Once beans are soft enough, drain water. 
  • Make the sofrito: Dice onions, peppers, garlic. 
  • Cut most of the meat off the ham hock into 2 cm squares. Fry these squares in a large pan and render the fat.
  • Once brown, remove the meat and fry the onions and peppers, when they begin to soften, add garlic until brown. Add cooking oil or butter if necessary. 
  • Place sofrito, ham meat, and beans in a large pot. Add ham hock bone. Add Lamb stock until all is covered and bring to boil.
  • Once boiling, reduce to simmer for about 2 hours, stir every 15 minutes or so.
  • Add pepper to taste, should not need salt. Top off with lamb stock as necessary.
